*Grilled Black Bean Quesadillas*

This is a mix of my own recipe taken from the foundational, Black Bean Quesadilla recipe from E-MEALZ Easy Meals for Busy and Frugal Families. 

Makes 3 full size Quesadillas

1 can of black beans
1 1/2 cups of cooked Basmati rice
1 Medium onion
1/2 tsp of chili powder
1 tsp of cumin
1 tsp of onion powder

Put oil in a frying pan and saute the above ingredients together for 5-7 minutes (or until onion is browned)

Begin filling whole wheat tortillas with above ingredients. Top with shredded Cheddar and Montery Jack Cheeses.

Place on grill, set between medium and high, for 5 minutes. (Rotate at 3 minutes if you want cool grill marks. ;)
Flip with wide spatula (this is difficult and I found an oven mitt that allowed me to touch the quesadilla helped immensely. Grill another 5 minutes (until brown and cheese is fully melted)

Allow quesadillas to sit for 5 minutes to "set" a bit.

Cut into quarters and top with you sour cream, salsa, and fresh chopped cilantro.
