* Vegetarian Tacos *

The more I read, the more convinced I am that a vegetarian lifestyle is healthier. . . .This is hard, because we're such meat eaters in our house. But I'm learning how to adapt recipes. The latest adaptation came with our favorite meal, tacos. Instead of hamburger meat, I did black beans.



Sort and rinse black beans (*I might add, I did my own black beans from my garden for this recipe! I was so proud! :-) I had never tried growing them before this year. )

Cover with water and bring to a boil. Boil for three minutes, then let sit, covered, for one hour.

Rinse thoroughly.

Cover with water again, leaving at least 1 inch of excess water.

Simmer for 1 hour at medium temp (check your water levels occasionally. The water simmers out pretty quickly and burnt black beans is an aweful smell! Not that I would know that. . . . ;-)

Drain all but 1 tbsp of water. Throw in a food processor and process up for 30-60 seconds. You don't want total mush, but you do want them broken down a bit.


Put olive oil in a frying pan and heat.

Add onion.

Add in beans.

Grate some cheddar cheese.

Add taco seasoning mix

Fry all together.


Serve with tacos just as you would with meat. Loaded down with gucamole, sour cream, fresh cliantro and tomatoes and salsa and hot sauce, we couldn't even tell a taste difference (though there was a texture difference). My hubby gave it two thumbs up!
